Duncan and Elizabeth Bone founded Fortress Cafe to introduce healthier food options in Jackson, complementing the fresh roasted coffee provided by Elizabeth’s brother, Thomas Hess, at Fortress Coffee Co. Following significant health scares, they expanded their mission by starting a farm to offer organically grown produce, ensuring clean ingredients are available for all.

The Bones have four young boys and enjoy being active, drinking coffee, and fostering a thriving community space. Duncan’s background in personal training and health coaching enhances the cafe’s offerings of quick, healthy bites.
